Honiglebkuchen – Honey Gingerbread

Ingredients

500g honey 1.1 lbs
4 eggs
375g sugar 1 ¾ cup + 2tbsp.
1/2 lemon zest

1Tbsp cinnamon
1 pinch ground cloves
1 pinch star-anise
1 Tsp anise
1 pinch nutmeg
1 pinch ginger
1 pinch coriander

100g candied lemon peel 2/3 cup
100g candied orange peel 2/3 cup
200g almonds 1 1/3 cup
2 Tbsp arrack
10g salts of harts horn (ammonium carbonate)
1kg flour 2.2 lbs

Warm honey until it is liquid. * Beat eggs and sugar to a foam. * Add spices, minced lemon peel and orange peel and finely ground almonds. * Mix with warm honey. * Solve salts of harts horn in arrack (or some other schnapps) and add it to the mixture.* Add the flour and knead it thorough. * Roll it to about 3/4cm thickness and cut out cookie shapes. * Let them rest in a cool place for a couple of hours or overnight. * Bake 15 minutes by 150°C. * Coat them with glaze and decorate with almonds and candied lemon peel

Glaze:
200g powdered sugar
1 Tbs lemon juice
2 Tbs rum
some water as necessary
