Mennonite Gingerbread – Mennoniten Lebkuchen

A delicious Christmas treat!


1 cup brown sugar
1 cup butter, softened
2 large eggs
½ cup molasses
2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground ginger
1 cup boiling water
2 teaspoons baking soda
Whipped cream, as needed


Preheat oven to 180°C (350°F) and grease a 9in. x 13in. pan. Don’t use a dark pan, shiny cooks more evenly.

In mixer, cream brown sugar and butter well, mix in eggs and molasses.

In separate bowl, whisk dry ingredients. In measuring cup, combine boiling water and baking soda.

Add dry ingredients and water alternately to dough, mixing well with each addition. Pour into pan and bake for 20-25 minutes or until done, being careful not to overcook. Serve with whipped cream on top.
