Hutterite Mile-High Lemon Pie – Hutterischer Zitronenkuchen

This whimsical pie with a zesty lemon filling will make your mouth water!


8 egg yolks, slightly beaten
240 ml (1 cup) sugar
1 tablespoon unflavoured gelatin
120 ml (½ cup) water
1 tablespoon lemon peel
120 ml (½ cup) lemon juice
¼ teaspoon salt
8 egg whites
¼ teaspoon cream of tartar
240 ml (1 cup) sugar
1 baked pie shell


Combine egg yolks, sugar, gelatin, water, lemon peel, lemon juice, and salt.

Cook over medium heat, stirring constantly until boiling.

Place pan in refrigerator, stirring occasionally until mixture mounds when dropped from spoon.

In separate bowl, beat egg whites and cream of tartar until frothy.

Beat in sugar one tablespoon at a time until stiff and glossy. Do not under-beat.

Fold in cooled lemon mixture, then pile into pie shell.

Chill several hours until set.
