Cold Smoked Pork Chops – Kalt Geräucherte Schweinekoteletts (Kassler)

This recipe comes from the February 1985 edition of the German magazine Burda Moden (now Burda Style).

Ingredients:

1.5 kg to 2 kg (3.3 lbs to 4.4 lbs) smoked pork chops
2 tablespoons brown sugar
2 apples, Golden Delicious or similar
8 prunes
1 orange
lemon juice, to taste
water
cress

Instructions:

Place in baking tray or other cooking container and cook in oven at 200°C (400°F) for 45 minutes.

After 25 minutes, take out of oven, sprinkle with brown sugar, put back in oven, and continue baking until done. When done, take out and let cool.

Peel and core apples, cut into rings. Steam apple rings with prunes and lemon juice (to taste) until desired taste and texture is achieved. Let cool when done.

Once cooled, take smoked pork chops, and decorate with apple rings, prunes, orange slices and cress, then serve.
