Easy to make and light tasting, this salad can be sometimes found on a “Gemischter Salatteller”. A very popular dish in Germany, the “Gemischter Salatteller” is a plate made up of different salads that is served at restaurants.
Ingredients:
½ cup mayonnaise
¼ cup sour cream
1 tbsp finely chopped fresh dill
1 tbsp finely chopped fresh parsley
½ teaspoon salt
freshly ground black pepper
1 large tart cooking apple, peeled, cored, and cut into 1/4 inch slices
1 ¼ – 1 ½ lbs. celery root
Instructions:
Beat together mayonnaise, sour cream, dill, parsley, salt and a few grindings of pepper.
Gently stir in the apple slices, cover the bowl, set aside.
Peel the celery root and cut it crosswise into 1/8 inch slices.
Drop the slices into enough lightly salted boiling water to cover them completely and cook for 20-25 minutes. The root should show slight resistance to the tip of a knife or fork.
Drain thoroughly and pat the slices completely dry.
Add the celery root to the dressing and stir gently to coat the slices thoroughly. Season to taste.
Serve immediately or refrigerate and serve cold.
