The Easter table should never be missing one thing: a delicious Easter lamb cake. This classic recipe is made with a few but good ingredients and makes for a great centre piece for your Easter table.
1 tablespoon warm water
zest from ½ lemon
1 teaspoon vanilla extract
60 ml (¼ cup) sugar
2 tablespoons sugar
160 ml (⅔ cup) flour
dash of baking powder
butter, as needed
flour, as needed
Mix egg, yolk, water, zest, vanilla until creamy. Add sugar and mix until white foamy consistency is reached.
Sift baking powder with flour and sift onto mixture, then mix together gently.
Grease form and sprinkle on flour and tap out any excess flour. Fill with batter.
Bake at 180°C (350°F) for 35 minutes. Depending on size of form, this might take longer. When done, take out of over, let cool, and dust with icing sugar.
